Ingredients

  • 4 slices Wholesome Harvest® Everything Bread
  • 2 avocados
  • ¼ cup packed fresh basil leaves
  • 1 tbsp. packed fresh dill 
  • 1 tbsp. chopped chives
  • 2 tbsp. extra virgin olive oil
  • ¼ tsp. each salt and pepper
  • 4 oz. Havarti, sliced
  • 1 carrot, thinly shaved
  • 2 cucumbers, sliced 
  • 2 small zucchinis, thinly sliced
  • ¼ cup microgreens

Directions

  1. Peel, pit and slice one avocado and set aside. 
  2. Combine herbs and olive oil in the bowl of a food processor and pulse until finely minced. Add remaining avocado, salt, and pepper to food processor and pulse until combined. 
  3. Spread avocado mixture on one side of each slice of bread. On two slices of bread, layer cheese, carrots, cucumber, zucchini, avocado slices and microgreens. Top each with remaining slices of bread, avocado side down.
