Kale Pesto Artichoke Caprese Sandwich

Take a break from boring lunches with this tasty, Italian-inspired creation.

Ingredients

  • 2 slices Wholesome HarvestĀ® 9 Grain & Seed Bread
  • 1 tablespoon whole grain mustard
  • 1 tablespoon basil pesto
  • 1-2 large tomatoes, thinly sliced
  • 2-3 artichoke hearts, chopped
  • 1 (8-ounce) fresh Mozzarella cheese, thinly sliced
  • 4-6 sun-dried tomatoes, roughly chopped
  • Handful of baby arugula
  • Balsamic vinegar and/or balsamic glaze for drizzling

Instructions

  1. Spread mustard and pesto on a slice of bread.
  2. Layer tomato, Mozzarella, artichoke hearts, sun-dried tomatoes and arugula.
  3. Drizzle with balsamic vinegar and/or glaze as desired.
  4. Top with remaining bread slice and enjoy!
